The trapiche is a machine type mill, in charge of extracting the cane juice.
The cane is pressed with the axes of the trapiche and the juice descends by a channel to collect it; the first big container stores the cane juice that is obtained directly of the trapiche, then it boils to different temperatures to obtain diverse variants of panela.
The combustion that heats the pans results from the burning of the 'vagaso' (cane remains).
The majority of the process is manual to elaborate the liquid panela (honey) and it consists in mixing the cane juice constantly so that it doesn't crystallize.
The extract of the cane will soon become panela (block and granulate) and honey.
In this area of Salinas - Ibarra, the inhabitants continue to make this product almost as their grandparents did.
